“It means a lot to me. We could not have done it without the support of the community in Japan.”

Hong Kong fine-dining Cantonese restaurants The Chairman and Wing, winner of the highest climber award, rounded out the top five.

The Sustainable Restaurant Award went to Haoma in Bangkok.

The One to Watch Award, which recognises a restaurant with potential to rise in the 50 Best rankings, went to Lamdre in Beijing.

Korean restaurant Mosu, headed by chef Sung Anh and with a branch in Hong Kong at M+ museum, won the Chef’s Choice award, drawing a huge round of applause from the room, especially from his fellow Koreans that were present.

The three-Michelin-star restaurant in Seoul, South Korea, is currently closed pending its relocation and will open in the same neighbourhood by summer, the chef shares.

“I’m speechless,” Anh said of his award. “To explain the feeling that I’ve been voted by chefs around the world, we forget that this is a community.

“We all have the same goal and for them to vote for me and write my name down when they think of who is respected - that is such an honour.”

Anh added that while host country South Korea did not have any restaurants in the top 10, he did not see this as a negative.

“We don’t see that as a problem. We see that as a chance to make this dining scene better, so that more people from foreign countries can come to Korea and discover our cuisine.”

The Best Sommelier Award went to Kevin Lu of Logy, who joined the Taipei restaurant in 2022.

Tokyo-based Mineko Kato received the award for best pastry chef for her artful vegan and plant-based desserts at Faro restaurant.

Chef Kevin Wong’s Seroja in Singapore – one of 2023’s hottest restaurants – received the award for highest new entry.

The “best in country” awards, which also applies to regions, went to Chef Tam’s Seasons in Macau, August in Indonesia, Toyo Eatery in Manila, Masque in Mumbai, Logy in Taipei, Fu He Hui in Shanghai, Mingles in Seoul, Odette in Singapore and The Chairman in Hong Kong.

Wing by chef Vicky Cheng rose a remarkable 32 spots to 5th to take the highest climber award.
